Hi - As predicted, tomorrow - Thursday, March 8 - will be Day 2. Please prepare accordingly. We will start class at 7:00 AM, unless otherwise informed, prep for service and for Day 3 (now Friday), all prep should be finished by 10:45 AM, family meal from 10:45-11:15 (each should be ready to serve about 20% of their items for family meal). At 11;15, return from family meal and get in position for service. Sous Chef - its your responsibility to have station assignments for service - ala minute cooks, line servers, soup/salad, carving station person. Sous chef will act as expeditor with my help.
If you have any questions about prep for service or for Dim Sum on Friday, please post them here of be ready to discuss as soon as we arrive on Thursday morning.
