- Know kimchi production method and different styles of kimchi
- Know Banchan
- Understand Kalbi
- Understand sweet potato starch noodles and the famous dish prepared with them
Japan:
Do :
- Know all key terms from course guide and power points
- Know the important components of Sushi and be familiar with the 3 styles made in class
- Do know Dashi , it's primary components and how it's made
- Do know the difference between Red Miso and White Miso
- Do be able to distinguish between the 4 types of noodles we looked at during the tasting on Day 7
Don't :
- Don't bother memorizing the major Islands of japan
- Don't bother memorizing the Japanese terms for various miso (mame, kome, mugi). For this quiz, you won't need to know this.
With this information, no additional Ppt. lecture will be needed on Day 8 to prep you for the quiz.
