Day 4, Koren menu

No significant changes to the info I gave you in the previous post, but if you have questions for Day 4, post them here. Have a good evening.

  1. Good evening Chef, I had just a few questions about Team 2's menu tomorrow.

    1) Can the prep and the "finishing" for the kimchi be done on the same day 5?
    2) 1 inch of miso between the vegetables for the pickles?
    3) Is there a salt percentage for the pickles like there is for the kimchi (3%)
