All information for the Korean menu was posted with the Day 3 information on Tuesday, refer back to that page for reference.
Day 4 is a NON- service day, but it is a "Dress-Rehearsal" day...set up everything as it should be for Day 5 - including Demo Table, Soup Station ,etc. This way, you've already seen it and done it, and on Day 5 there won't be any surprises.
On day 3, I will have gone over each station set up with individual teams. Using the information given during those briefings, re-write your station diagram as neatly and with as much detail as possible, you'll need them to set up properly on Day 4 AND on Day 5. The diagrams will not be collected, but if your station is deficient in any way, the Chef may ask to review the diagram with you. Be prepared to look prepared!.
