Day 7 - Japan and Beyond

Hey, everything is cool, and apparently I'll live to torture at least a few more CIA students in K1. Let me know how Day 6 went, post any questions for Day 7 if you have them - BE SURE TO LOOK AHEAD TO DAY 8/9 FOR THE VIETNAMESE MENU. Make sure you know what you're expected to do for prep.

Station 6 - you need to organize the Japanese Tasting on Tuesday - who's helping?

  1. Good to hear that Chef. CIA will still need your service for looong time.. LOL.. Everything went really well today chef. :) We were by ourselves for an hour and half until chef Smythe came. Everything went pretty smooth. We were on time for service and lecture.

    Key Terms link: impressive.. your like spoon feeding the kids now... :) totally made it convenient and easier for us. :P

  2. Hello Chef. It's great to hear you can torture many more CIA kids in the future. Day 6 went pretty well. We had a little trouble putting in a supplemental since we didn't have a chef until 8:45 ish, but everything was done by the end of the day.
    The key terms link seems pretty cool and makes studying waay too easy. Just my opinion.

    Simon and I just have a few questions.
    1. for the orange, peeled 1/2 do you want half a whole orange peeled and thrown in the blender or 1/8 of the peel of one orange?

    2. The recipe for the Ni-Ban dashi says to use one gallon of water, but we need two for the soup and other people need some. Can we just make 2.5 gallons of Ni-Ban dashi with the leftover Katsuobushi and Kombu or sould we make 1.5 gallons of Ichi-Ban dashi as well?

  3. Chef the tracking schedule says that I have to prep for Day 9: beef filling La lot leaves for 100 portions and prep 16# of pork ribs. Is this correct?

    This is the beta run for anything like this at CIA.

    I hate spoon feeding, but I only have 3 weeks to teach a life lesson. I struggle with this every day. You guys are all good, so I trust your opinions. Do you think I should do this for each unit and set an example on how to research? Or should I tell them what to do and bust them when they're lazy? Important call to make, I need your opinion to further the value of your diplomas.

    Orange Dressing- The recipe calls for 1/2 of a peeled orange - HOWEVER - it might be cool to zest it before peeling (I'll show you a trick for that), make the dressing, and then see how it turns out if we add the zest to the finished dressing. Good question.

    Dashi - Use the solids you have to make 2.5 gallons of Ni-Ban Dashi. It will be mild in flavor, but we don't need it to be that strong for the soup.

    Yelena - Marinate the ribs (make sure to watch demo on prepping ribs) and use 4# beef for LaLot on Day 8. That will be enough for both Days 8+9
